Cruciferous Champions
What is a cruciferous vegetable, you might ask? Well, chances are you already eat them! By definition, cruciferous means "relating to or denoting plants of the cabbage family" (Oxford Language Dictionary). While cabbage is one vegetable that falls into this category, there are so many other that you may not realize are also cruciferous vegetables. They include arugula, kale, bok choy, broccoli, brussels sprouts, cauliflower, horseradish, kohlrabi, mustard greens, turnip greens, collard greens, watercress, and radishes. There are many benefits to eating these vegetables. They are low in calories and rich in fiber, which helps with satiety. They are full of vitamins C, E, K, and folate. They are rich in phytonutrients that help lower inflammation and decrease the risk of cancer, diabetes, and heart disease.
