Instructions

To Make Cashew Cream
  1. In a small bowl, combine water and cashews. Let them soak for at least 2 hours or overnight at room temperature.
  2. In a blender, blend the cashews and water at high speed until a creamy and smooth consistency is reached, about a minute..
To Make Truffles
  1. In a medium bowl combine the cashew cream and chocolate chips.
  2. Place the bowl over barely simmering hot water.Stir occasionally until the chocolate has melted and the mixture is smooth.Remove from heat and stir in the date syrup, vanilla and orange zest.
  3. Refrigerate until mixture is firm, about an hour.
  4. Using a 1 tbsp. scoop, spoon out mixture and roll into a ball.Place on a lined baking sheet and refrigerate until firm (about an hour).
  5. Roll truffles in desired toppings.
