Instructions

  1. Place the rack in the center of your oven, then preheat to 350 degrees.  Peel and core the apples then slice them into 1/4 thick chunks.
  2. In the bottom of a 9x9 inch baking pan or 2-quart casserole dish, mix together the filling ingredients.  Set the dish aside.
  3. Combine topping ingredients in a medium bowl until well combined.  Sprinkle on top of the apple mixture and place in the oven for 45 minutes.
  4. Remove the dish from the oven and stir the topping into the apple mixture.  Place the dish back in the oven for 15 more minutes until the mixture is bubbling and apples are tender.
  5. Serve warm with coconut whipped topping or non-dairy vanilla ice cream.

    Notes:

    A variety of sweet and tangy apples makes for a delicious crisp!
