Instructions

  1. Add 1-2 tbsp water or vegetable broth to a large saucepan. Over medium heat, saute garlic for 30 seconds or until fragrant.
  2. Add bay leaf, red wine, and tomato sauce and stir until fragrant and well combined.
  3. Add basil through pepper and stir until combined. Cover the saucepan and reduce temperature to low and simmer for 10 minutes.
  4. Add zucchini and peppers. Stir to combine then allow to simmer for an additional 5 minutes covered.
  5. Add eggplant, tomatoes, and tomato paste and stir to combine. Replace the cover and simmer for 8 minutes until the vegetables are tender. Remove from heat and serve alone as a side dish or over rice for a main dish.
