Instructions

  1. Cook rice according to directions.
  2. While rice is cooking, toast the pine nuts at 350 degrees for 5 minutes or until golden brown.
  3. Once the rice is done, combine rice, pine nuts, parsley, seasonings, and lemon juice to taste.

Notes

Season the rice with salt, pepper, and lemon juice after cooking. If you are not serving immediately, taste the rice and add additional seasoning and lemon juice as needed right before you serve the dish.
