Soak and Cook Beans
  1. Place black-eyed peas into a saucepan and cover with water. Bring to a boil and then remove from heat and let sit for 60 minutes.
  2. Rinse the beans and cover with fresh water. Bring to a boil again and then reduce heat to a simmer. Cook for 60 minutes or until beans are soft.
  3. Drain beans and place in a large sauté pan.
Make Curry
  1. Combine beans, tomatoes, coconut milk, and spices in a large sauté pan and bring to a boil. Reduce heat and simmer for 10-15 minutes or until desired thickness is achieved.
  2. Serve over rice of choice.
