Instructions

  1. Soak the raw cashews in 1 cup of hot water for 15-20 minutes.
  2. Place the cashews, water for soaking and the remaining ingredients in a high speed blender and blend until smooth.
  3. Place the mixture in a saucepan and heat over medium heat for approximately 5 minutes or until thickend to the consistency of nacho cheese sauce.
  4. Pour over tortilla chips, stir into veggie chili or use as a sauce for veggie tacos.
