Instructions

To prepare the crust
  1. Combine the dates, cashews, and 1/2 cup of coconut together in the food processor.
  2. Process until thick and an evenly distributed mixture forms.
  3. Press the crust mixture into an 8x8 pan lined with parchment paper. Pack as tightly as possible.
To prepare the filling
  1. Take the dates and finely chop them into small pieces. Place them in a saucepan with the water.
  2. Cook over medium-low heat, stirring continuously, until a thick, gooey mixture forms.
  3. Remove from the heat and let the mixture cool for 10 minutes, then stir in pecans and coconut flakes.
  4. Transfer the mixture to the baking dish, then top with chocolate chips and press them lightly into the mixture.
  5. Place them in the oven at 350 degrees for 20 minutes, then remove from the oven and let cool completely before removing from the pan.
  6. Cut into 8 pieces and enjoy!
