This healthy dessert will hit the spot without the guilt!
Instructions
To prepare the crust
- Combine the dates, cashews, and 1/2 cup of coconut together in the food processor.
- Process until thick and an evenly distributed mixture forms.
- Press the crust mixture into an 8x8 pan lined with parchment paper. Pack as tightly as possible.
To prepare the filling
- Take the dates and finely chop them into small pieces. Place them in a saucepan with the water.
- Cook over medium-low heat, stirring continuously, until a thick, gooey mixture forms.
- Remove from the heat and let the mixture cool for 10 minutes, then stir in pecans and coconut flakes.
- Transfer the mixture to the baking dish, then top with chocolate chips and press them lightly into the mixture.
- Place them in the oven at 350 degrees for 20 minutes, then remove from the oven and let cool completely before removing from the pan.
- Cut into 8 pieces and enjoy!
