High Protein Brownies

This brownie recipe will leave you will all of the joy and none of the guilt.

Ingredients

Instructions

  1. Preheat oven to 350°F. Line an 8x8 pan with parchment paper.
  2. Soak the dates in hot water for about 10 minutes.
  3. Add soaked dates and water to a food processor and blend until smooth.
  4. Add peanut butter, Greek yogurt, eggs, and vanilla. Blend again until creamy.
  5. Stir in oat flour, cocoa powder, baking powder, salt, and optional protein powder.
  6. If batter feels very thick, add 1–2 tablespoons milk.
  7. Fold in chocolate chips if using.
  8. Pour into prepared pan and bake:
  9. 20–22 minutes for fudgier brownies
  10. 24–27 minutes for fluffier/cakier brownies
  11. Cool completely before slicing.
