  1. Line an 8-inch baking pan with parchment paper and set aside.
  2. Make the pecan layer: Add dates and nut butter to a food processor until you get a somewhat cohesive sticky mixture like wet sand.
  3. Add in 1 cup of pecans, vanilla, and salt. Blend until the pecans are fully incorporated, and you get a soft, sticky mixture. Pulse in the remaining 1/2 cup of pecans until medium to small pieces are visible.
  4. Press the mixture into the baking pan into a tight even layer.
  5. Make the chocolate layer: Melt the chocolate and remaining nut butter in a microwave, making sure to stir at regular intervals to prevent burning the chocolate.
  6. Stir until well combined and then pour over the pecan layer and smooth out the mixture. Sprinkle the chopped pecans on top and press them lightly into the chocolate layer.
  7. Place in the freezer for 20-30 minutes then remove and slice into 16 bars.
  8. Store in the freezer or refrigerator.
