Instructions

  1. Add the drained and rinsed chickpeas to a food processor along with the nut butter. Process them for 1 minute
  2. Add the melted chocolate and process again for 1-2 minutes.
  3. Use a cookie scoop to scoop the batter and place it on a baking sheet lined with parchment paper.
  4. Freeze the balls for 15 minutes.
  5. Roll the balls in the second cup of melted chocolate and place them back on the tray lined with parchment paper. Put them back in the freezer until the chocolate has hardened.
  6. Remove them from the freezer and store them in the refrigerator for 4-5 days. They can also be kept in the freezer for 3 weeks.
