Greens to Lean

"The more you eat green, the more you get lean."

- Joel Fuhrman, M.D., The End of Heart Disease

I will fully admit that I am a nutrition nerd.  I love to read books about nutrition or diets. When I hear about a new one the first thing I do is head to Amazon to order it! I've spent the last few days reading The End of Heart Disease by Joel Fuhrman.  The book is a bit technical so if you are not into reading that much science the book may not be for you.  However, the book contains some fascinating information and if you know someone that suffers from cardiovascular disease then it is a must read.  One of these nuggets is that eating greens is a great way to get lean.  It also promotes longevity because greens contain an extremely high nutrient density.  Furthermore, they are associated with decreased incidence of cardiovascular disease. Greens include :

  • Arugula

  • Bok Choy

  • Broccoli

  • Brussels Sprouts

  • Cabbage

  • Cauliflower

  • Collard Greens

  • Kale

  • Mustard Greens

  • Radish

  • Turnip Greens

  • Watercress

So eat your greens and lots of them!
