Starting Your Day in a Healthy Way while Travelling

I recently went to Florida for the World Barre Fitness Summit followed by my company's master trainer summit. We stayed at a beautiful hotel but the options for breakfast were both unhealthy and expensive. I'm not a fan of spending $30 on a breakfast buffet where I will only eat the oatmeal and some fruit. The Starbucks in the hotel has oatmeal but that adds up as well so I started thinking of a solution. To further complicate things I was flying so I couldn't pack a cooler. What could I bring that would be light and easy to pack? Turns out Muesli is a great option. Add a little plant milk (the Starbucks was willing to sell me a cup of coconut milk for $2.00 that lasted all week), wait ten minutes and enjoy! It requires no refrigeration or microwave to prepare it, it is light-weight, and it is delicious and healthy. Most store-bought Muesli is mostly healthy but most if not all contain added sugar. In reality Muesli is just oatmeal with fruit and nuts so why couldn't I make a healthier and less expensive version. Turns out it takes about 5 minutes to make and is added sugar-free. Try it sometime when you are travelling or even for a delicious breakfast at home.

The Best Homemade Muesli

(10 servings)

Ingredients:

3 cups rolled oats
2/3 cup raw nuts of your choosing (can be a mixture of nuts)
1/3 cup raw pumpkin seeds
2/3 cups unsweetened dried fruit (can be a mixture of different fruits)
1/2 tsp cinnamon

Instructions:

1) Combine all ingredients in an airtight container and mix.
2) Store for 1-2 weeks in the pantry or 1 month in the refrigerator.

To make a serving: Measure 1/2 cup muesli into a bowl or jar. Cover with plant-based milk or yogurt and stir to combine. Let it sit for 10-15 minutes to soften. Top with fresh fruit if desired.
